“Snow” Day Slow Cooker Chicken Stew
Hi friends! I posted this recipe on Instagram just before the storm hit this weekend because I was prepping a few recipes that could be easily warmed up on our gas cooktop if we lost power. Our area was forecasted to get as much as an inch or more of ice.
Thankfully the ice storm was not AT ALL as bad as they predicted where I live, and we did not lose power. I am stunned at the images coming out of Mississippi and Tennessee. I pray they are able to get the power back on there quickly! I feel so fortunate to have kept our power on during these cold nights. Even with our power, it was so nice having this warm and cozy stew for the icy weekend ready to go. I simply re-warmed it in a pot while I cooked our biscuits and dinner was done! This was great re-heated and easy to prep in advance. I am definitely putting this one on my go-to list for make-ahead meals. Soup season has been one of the most difficult for me to enjoy now that I cannot have dairy, because it seems all of my favorites are cream-based or cheesy, but this Slow Cooker Chicken Stew was a winner.
