Weeknight Winner: Lemon Chicken Casserole
February was an absolute blur of the flu, bronchitis and breathing treatments, Daddy Daughter dances, and school talent shows. I’m tired of the rain, tired of the germs, and tired of being COLD. Thank the good Lord I can see the light at the end of the tunnel and Spring is nearly here. We are slowly warming up this week and I’ve planted my first garden herbs and veggies of the season. I am daydreaming of meat on the grill with a side of fresh goodies from the garden. For now, this delightfully easy Lemon Chicken Casserole is on the menu here. It is super easy, only a few ingredients, and my whole family loves it. My kids will smother it with parmesan, but it honestly does not need it. The lemon flavor of this dish brings all of the flavors to the forefront, and the coconut cream is the perfect balance to the bold citrus. Nothing overly processed or filled with oils. Just real ingredients you can feel good about putting on your family’s plate. The best part is, I think the leftovers might be even better. This one is in our regular rotation. Happy March!
